The Salted Egg Dishes You Can Try At Home!?

This does not come as any surprise but, salted egg is actually catching on pretty fast within the market of Malaysia. Not only does it taste good, but it is a food which is pretty versatile and one that can be added into a number of different dishes if you really would want to get creative with what you are doing. In Malaysia, salted egg is a growing trend when it comes to foods, but all across the world people are already very much familiar with this particular food. For many people, keeping up with the salted food craze these days can be something which is quite challenging, especially if there are restaurants out there that have claimed a dish as their new star on the menu.

However, you can and should try incorporating the salted egg yolk to your existing dishes or give it a traditional salted egg dish makeover. Whatever you serve, it is quite hard to go wrong with some salted egg yolk dish. In a country obsessed with eating, we have seen many food trends come and go. One of the latest trends to hit our shores is the obsession over any dish containing salted egg. Sweet or savoury, the salted egg flavour seems to pair well with almost anything and everything. In this article, we will be going over a few unique and amazing dishes that you can try at home or even purchase whenever you would want it at your own convenience.



SALTED EGG BIBINGKA MUFFINS
These sweet and savory muffins are a flavorful twist to the traditional Filipino dessert made of rice flour and also coconut milk, which is usually served during Christmas. This recipe calls for a modern take on this classic recipe, with the amazing addition of salted egg yolks and also Kesong Puti which is a type of Filipino white cheese which is made of carabao milk. Do not worry if you are not able to find Kesong Puti. Just replace it with some mild white Cottage cheese such as mozzarella or even paneer. You will find the full recipe for this dish here.

Ingredients: 1 cup of rice flour, 3 quarter cups of sugar, 3 medium eggs (beaten), 1 cup of coconut milk, a quarter cup of evaporated milk, a quarter cup of butter (melted), half a cup of kesong puti (white cheese) which is about a 100 grams, plus some extra for garnish, 4 slices of ham which have been diced, and some extra for garnish as well.

Directions: Start by preheating the oven to about 350°F. Line up a 12 cup muffin pan with some muffin liners. Combine the rice flour and also the sugar in a bowl. Combine the eggs, coconut milk, evaporated milk, and also butter in another bowl. Add in the wet ingredients to the dry ingredients and whisk it together until it becomes smooth. Pour the batter into muffin cups until 3 quarters full. Top each cup with some kesong puti and some ham. Bake it in the oven for about 12 to 15 minutes until the center is set but moist, or to the point where a toothpick inserted in the center comes out clean with only a few crumbs. Finally, remove the muffins from the pan and let it cool on a wire rack for a few minutes. Top it off with some extra kesong puti and also ham. The muffins are ready to be served warm.



TOMATO, GRILLED EGGPLANTS AND SALTED EGG SALAD
This is a great alternative if you are looking to have a light breakfast or brunch without filling yourself up with too many calories. The additional saltiness of the eggs is neutralized by the grilled eggplant, and the tomatoes will lend a fresh and juicy kick which will be perfect when you want to get more of those healthy vitamins. This recipe could easily be made within a couple of minutes and is more than certainly a very healthy alternative to cut down those extra calories. Ingredients: 2 large eggplants, 1 cup of grape egg tomatoes halved or 3 large Roma tomatoes, chopped, 2 salted duck eggs, peeled and diced, 1 tablespoon of green onions, chopped.

For the dressing: Half a cup of vinegar, 1 teaspoon of fish sauce, 1 shallot, peeled and minced, some pepper to taste.

Directions: With either a knife or a fork, prick the eggplant. Lay the eggplant directly on the gas stove top over the high flame and let it roast, rotate it occasionally with tongs, until it has slightly softened and the skin is evenly charred. Allow it to cool to touch and then you can peel skin off. Gently rinse it under cold, running water to get rid of stray skin and coarsely chop flesh. To serve, layer the tomatoes, grilled eggplant and also the salted egg. When your meal is ready to serve, drizzle it with some vinegar dressing and gently toss it together to combine. Finish it off by garnishing it with some green onions.

For the dressing: To finish off the dressing, in a small bowl, combine the vinegar, fish sauce, shallots and also the pepper to taste.



SALTED EGG FRIED RICE
Do you know what else goes well with some salted egg yolk? Fried rice, for sure! As with all the other recipes we went through, the egg yolk should be steamed and mashed before you add it into the fried rice. Prawns are always a great option to include into your meal, as the springy texture it contains gives that extra bite to the dish. Here is how you can prepare your own bowl of salted egg fried rice.

Ingredients: 2 salted eggs, 2 cups of cooked fresh rice, 2 cloves of garlic (finely chopped), 2 tablespoons of cooking oil, a few pieces of prawns or chicken, 1 teaspoon of oil, 1 tablespoon of butter, half a cup of finely sliced spring onions, 2 bird’s eye chilli (optional).

Directions: Start by breaking the salted egg yolk and white. Steam the salted egg yolk for about 10 minutes or until fully cooked. Then mash the egg yolk and set it aside. Heat up the pan and put in 2 tablespoons of oil. Add in the garlic and saute it until golden brown. Add in your rice and then toss it until the rice is hot. Dish it all up and then set it aside. Add in 1 tablespoon of oil and brown prawns or chicken. Push it to the side of the pan. On a low heat, add in the butter and mashed egg yolks. Cook it until the egg yolks start looking foamy, then you can add in the bird’s eye chilli at this point if you prefer to do so. Push the prawns or chicken onto the foamy egg yolks and then cook it for a while.

Turn the heat up to high. Put the rice back into the pan and toss it until rice becomes hot again. Push the rice to the side and then toss in the egg whites. Quickly push the rice onto the egg whites because the salted egg whites cook really quickly, and then toss the rice so that the egg whites will be dispersed properly. Finally, season the rice with some pepper and your meal is ready to be served.
