Nothing beats a cooling drink of barley on a hot day, especially when it comes with a squeeze of lemon for a refreshing citrusy flavour. Traditional Chinese remedies call for barley to balance out the yang in your body particularly after consuming heaty foods as barley is believed to be a cooling or yin element and can help restore balance. But did you know that what’s loosely called barley in coffee shops and traditional Chinese medicine shops is actually a grain named Job’s Tears? Distinguished from barley only by its larger and rounder shape (Job’s Tears are generally twice the size of barley grains), Job’s Tears are also nicknamed Chinese pearl barley despite having no association to the barley family. Its real name is in fact, coix seed. Nonetheless, its cooling properties are definitely present no matter the name and it has been known to help enhance immunity, cleanse and hydrate the body as well as nourish the skin. This traditional beverage acts as a diuretic that helps the body to remove excess water and waste products while simultaneously rehydrating the body. Paired with lemon, a great source of vitamin C and antioxidants, it transforms this drink into an immune-boosting, anti-aging and digestion aid tonic.

What Does This Taste Like?
Mildly sweet with the fragrance of barley and a zesty hint of lemon.

Usage Directions
1. Pour the herbal tea ingredients into 2 litres of water and bring to boil.
2. Once the tea boils, lower the temperature and allow it to simmer for an additional 1 hour.
3. Serve hot or cold as desired. Chill in the fridge if a cold beverage is preferred.
