Recipe: Muesli Bread

INGREDIENTS:
- 1/2 cup milk
- 1/2 cup water
- 1 cup of muesli
- 1 tsp honey
- 2 cups bread flour
- 1 teaspoon of salt
- 1 cup of nuts of our choice
- 1/2 cup dried fruits of your choice
- 1 packet yeast
- 1/4 cup water
- 1 beaten egg (for brushing)
- rolled oats (for sprinkling on the surface), optional

INSTRUCTIONS:
1. Mix milk, water, honey and the muesli and soak for about 15 minutes.
2. Dissolve the yeast in 1/4 cup warm water. Add the yeast, salt, and flour to the bowl with the muesli and mix well.
3. Turn the sticky dough onto a floured surface and form it into a rectangle.
4. Spread half of the fruit and nuts over the surface, then fold the dough in from each side and add the rest of the fruit and nuts.
5. Knead the dough and put in a clean, oiled bowl, cover well and set in a warm place to rise for an hour.
6. Turn the dough out onto a parchment lined baking sheet and gently form into a rectangle loaf.
7. Brush with beaten egg and sprinkle with oats.
8. Bake for 35-40 minutes at 230°C.
