1. Keto Raspberry Lemonade Muffins
Ingredients: 1 cup of blanched almond flour, one eight of an ounce of baking soda and Celtic sea salt, 3 large eggs, a quarter cup of grapeseed oil, 1 tablespoon of lemon zest, quarter teaspoon of vanilla stevia and a cup of frozen raspberries.

Instructions: Pulse almond flour, baking soda, and salt in a food processor. Pulse in the eggs, oil, lemon zest, and stevia for 20 seconds. Stir the raspberries in by hand. Divide the batter between 8 paper lined muffin cups. Bake at 350°F for about 30 minutes. Let it cool for about 30 minutes and it is ready to be served.



2. Low-Carb Paleo Chocolate Zucchini Bread
Ingredients: 1 and a quarter cups of blanched almond flour, a quarter cup of cacao powder, quarter teaspoon of Celtic sea salt, half teaspoon of baking soda, 2 large eggs, 2 tablespoons of coconut oil, quarter cup of honey, quarter teaspoon of vanilla stevia and 3 quarter cup of grated zucchini.

Instructions: Begin with combining almond flour and cacao powder. Pulse in salt and baking soda and then pulse in eggs, coconut oil, honey, and stevia. Shortly pulse in zucchini. Transfer the batter to a greased 6.5 x 4 inch small loaf pan, dusted with almond flour. Bake at 350°F for 40 minutes. Cool for 2 hours and serve.



3. Sesame Crackers
Ingredients; 3 cups of blanched almond flour, 1 and a half teaspoon of Celtic sea salt, 1 cup of raw sesame seeds, 2 whisked large eggs and 2 tablespoons of olive oil.

Instructions: In a large bowl, stir the almond flour, salt, sesame seeds, eggs, and oil until well blended. Separate dough into two. Place each half of dough on two pieces of parchment paper. Roll out dough to one eight inch thick. Cut into 2 inch squares using a knife. Transfer to two large baking sheets. Bake at 350°F for about 12 minutes, until golden brown. Let it cool and serve.



4. Silver Dollar Pancakes
Ingredients: 3 large eggs, 1 tablespoon of water, 1 tablespoon of vanilla extract, 2 tablespoons of honey, 1 and a half cups of blanched almond flour, quarter teaspoon of Celtic sea salt, quarter teaspoon of baking soda, and grapeseed or coconut oil for cooking.

Instructions: In a large bowl whisk the eggs, water, vanilla and agave. Add the almond flour, salt and baking soda and mix until combined. Heat the coconut oil on a skillet on medium heat. Scoop 1 heap teaspoon of batter at a time onto the skillet. Pancakes will form little bubbles, when bubbles open, flip pancakes over and cook on the other side. Remove from heat and plate. Repeat the process with remaining batter, adding more oil to skillet as needed.



5. Primal Chocolate Chip Cookies
Ingredients: Quarter teaspoon of Celtic sea salt, baking soda and palm shortening, 2 cups of blanched almond flour, 2 tablespoons of honey, 1 tablespoon of vanilla extract and half a cup of chocolate chips.

Instructions: Combine the almond flour, salt, and baking soda into food processor. Pulse in shortening, honey, and vanilla until a dough forms. Remove blade and stir the chocolate chunks by hand. Scoop dough one tablespoon at a time onto a parchment paper lined baking sheet. Press the balls of dough down gently. Bake at 350°F for 8 minutes. Cool for 15 minutes and serve.
