Quick Quinoa Meatballs

Ingredients:
• 1/2 cup washed quinoa
• 450g ground chicken
• 1/2 cup diced red onions
• 4 garlic cloves, smashed
• 3 medium eggs
• 1/2 teaspoon black pepper
• 1/2 teaspoon Signature Market Spice Kit Organic Cayenne Pepper Powder Mild
• 1/2 teaspoon paprika
• 1/2 teaspoon dried oregano
• 1/2 teaspoon dried parsley
• 1/4 teaspoon Signature Market Organic Cinnamon Powder

Directions
Step 1
Preheat the oven to 170°C. Line a baking sheet with parchment paper.
Step 2
Put 1/2 cup of water and quinoa into a saucepan and bring to a boil. Once there is strong bubble action, reduce the heat to low, cover, and cook until the water is absorbed, it takes about 12 to 15 minutes. Stir to make sure no quinoa is burning at the bottom of the pan. After that, take the saucepan off the heat, transfer the cooked quinoa to a bowl, and allow it to cool for 10 mins.
Step 3
While waiting the quinoa to cool down, add all of the remaining ingredients into a big mix bowl. Use your hand to mix until all the ingredients are well combined.
Step 4
Shape the meat mixture into bite size ball shape. Place them in even rows on the lined baking sheet. Place the sheet in the oven and cook the meatballs until they turns slightly golden brown and crispy on the top, it takes about 10-15 mins.
