Recipe: Tofu Patties

It is so easy to make for those days you feel like eating healthier.

INGREDIENTS:
- 1 carrot, grated
- bunch spring onions, sliced, plus extra strips to serve
- 1 garlic clove, crushed
- 3cm piece ginger, grated
- 400g block firm tofu, drained and crumbled
- 2 eggs, lightly beaten
- 4 tbsp vegetable oil
- salt, to taste
- pepper, to taste

INSTRUCTIONS:
1. Combine all the ingredients except the oils in a large bowl with some seasoning and mix well.
2. Heat oil in a frying pan.
3. When hot, pour 5 tbsp of the batter in and turn the heat down to medium.
4. Cook 4-5 mins each side until golden.
5. 4. You can serve these tofu patties with guacamole from previous post.
