Butter or margarine? Margarine or butter? Which one is better? Which one is healthier?

What is butter?
Butter is made by churning the fatty portion of cow's milk until it turns into the final product butter.

Butter is loaded with saturated fat and cholesterol
- Studies showed that saturated fat will not lead to cardiovascular disease.
- Saturated fat will raise the total cholesterol which includes HDL cholesterol (good cholesterol) and LDL cholesterol (bad cholesterol).
- Consuming saturated fat can also change the LDL from small LDL particle to large LDL particle which is benign.

What is margarine?
- Margarine is totally different from butter as it is a highly processed.
- The main ingredients include vegetable oil along with emulsifiers, colourants and various artificial ingredients.

Margarine contains vegetable oils and trans-fat.
- Safflower oil or soybean oil are the main ingredients of the margarine.
- In order to make it into solid form, vegetable oils (liquid at room temperature) undergo hydrogenation process which exposes the oils to high heat, high pressure, hydrogen gas and a metal catalyst.
- The hydrogenated fats are also known as trans-fats, which is commonly associated with heart disease.

SO, BUTTER OR MARGARINE?

1. The American Heart Association suggests that buying spreads that are soft and free from trans-fat instead of regular butter or stick margarine. 
2. Select a spread blend with the least amount of saturated fat and zero trans-fats.
3. Check the ingredients: If it says partially hydrogenated oils, there are still a little amount of trans-fat even if the label says trans-fat free.
