Recipe: Crunchy Baked French Fries

Craving for french fries but trying to maintain your healthy lifestyle? Pamper yourself with this guilty free French fries recipe.

INGREDIENTS:
- 4 teaspoons olive oil
- 4 medium baking potatoes, scrubbed
- 1/2 teaspoon salt
- 1/8 to 1/4 teaspoon freshly ground black pepper
- 1/4 cup grated Parmesan

INSTRUCTIONS:
1. Cut the potatoes lengthwise into 1/2-inch-thick wedges.
2. Boil the sliced potatoes for 2 to 3 minutes. Drain off the water and transfer the potatoes to a big bowl.
3. Add 2 teaspoon of olive oil and toss to coat. Sprinkle potato wedges with the salt and black pepper, tossing to coat.
4. Line a baking sheet with aluminum foil. Brush with 2 teaspoons of the olive oil.
5. Arrange potatoes in a single layer on prepared baking sheet.
6. Bake in a 450°F oven for 12 minutes. Turn potatoes and sprinkle with the Parmesan. Bake for 10 to 12 minutes more or until tender and golden.
