INGREDIENTS:
- 230g minced meat
- 12 eggs
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 teaspoon minced garlic
- 1/2 cup cheese
- 1/2 cup diced tomatoes
- butter
INSTRUCTIONS:
1. Preheat oven to 175°C. Lightly grease muffin cups.
2. Stir fry the minced meat with some butter.
3. Beat eggs in a large bowl. Stir in onion, green pepper, salt, pepper, tomatoes and garlic. Mix in minced meat and cheese. Fill half of each muffin cup with egg mixture.
4. Bake in preheated oven until a knife inserted near the center comes out clean, 20 to 25 minutes.
