Simple and fast recipe for making naturally wholesome anchovies stock. The anchovy stock is used for in soups, noodle broths or in porridges.
INGREDIENTS:
- 10 - 12 medium to large dried anchovies
- 2 pieces of dried dashima (about 3-inch squares)
- 1/2 small onion whole
- 30g of radish
- 2 - 3 cloves of garlic
- 11 – 13 cups of water
- 3 dried shiitake mushrooms, pre-soaked
- 1 cup of mushroom water
INSTRUCTIONS:
1. Remove the guts by opening the belly and scraping them out, but leave the heads on.
2. Precook the anchovies for a few minutes in a heated dry pan
3. Place all the ingredients into a large pot and bring it to a boil. Reduce the heat to medium high and boil for 30 minutes.
4. Skim off any foam on the top. Strain out the liquid into another bowl or pot.
