Simple and easy way to improve your appetite to eat vegetables.
INGREDIENTS:
- 200g mushrooms of your choice
- 300g baby potatoes, cubed
- 300g tomatoes, cubed
- 1 red bell pepper, diced
- 10-12 large garlic cloves, peeled
- 1/4 cup of live oil
- 1/2 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and pepper, to taste
- 1 red onion, cubed
- Red pepper flakes, optional
INSTRUCTIONS:
1. Preheat the oven to 200°C.
2. Place all the mushrooms, vegetables and garlic in a large mixing bowl. Add olive oil, dried herbs, salt and pepper. Toss to combine.
3. For potatoes, roast them on a lightly-oiled baking sheet for 10 minutes.
4. Add the mushrooms and remaining vegetables and roast for another 20 minutes until the vegetables are tender.
