Simple and slightly tangy for those who wants to eat healthier.
INGREDIENTS:
- 4 chicken breasts
- 1 tablespoons virgin oil
- 3 teaspoons minced fresh garlic
- 1 teaspoon freshly grated lemon peel
- 1/4 cup fresh lemon juice
- salt, to taste
- pepper, to taste
- 1/2 cup loosely packed fresh basil leaves
INSTRUCTIONS:
1. Pound chicken lightly.
2. Blend lemon peel, lemon juice, garlic, salt, pepper, oil and basil in a blender until well blended.
3. Pour the marinade over the chicken in a bowl and turn to coat chicken thoroughly. Marinate in the refrigerator for at least an hour to overnight.
4. Preheat grill at 200°C for 10 minutes.
5. Grill for 4 to 6 minutes with foil covered
