Ginseng Chicken Soup Recipe [GIVEAWAY]

Your fave fitness buff nutritionist, Victor Chao is back in action with more recipes for you this Chinese New Year! And this time he has the Chinese Ginseng Chicken Soup in store for you guys.

Slowly cooking ginseng, along with some Chinese herbs and a whole chicken results in one of the most luxurious herbal soup. I tend to be a bit purist when it comes to cooking ginseng soup, adding just jujube fruits (or red dates) and goji berries to give enough sweetness to counter the natural bitterness that oozes from ginseng. I have seen many recipes calling for a lot more herbs than just the two, but seriously, when I cook a ginseng soup, I want to taste the ginseng, and not a whole bunch of other things.

There are two types of Ginseng, the Korean ones and the American ones. The Korean ones are usually brownish red in color while the American ones are yellow in color. Korean ones are always preferred but we here at Signature Market tend to have both because why not? So for this recipe, Victor will be using 2 main ingredients from Signature Market, the Dried Red Dates and Dried Goji Berry. Both the dried red dates and dried goji berries are high in antioxidants, good for your skin and also good for your eye health.

Khind Electric Pressure Cooker PC6000
For this Ginseng Chicken Soup, we'll be using the Khind Electric Pressure Cooker PC6000, an impressive all multi purpose cooker. It can be used as a pressure cooker, multi cooker and a slow cooker as well. The PC6000 comes with a digital display with touch sensor control progammable menus to make cooking easier. Ingredients:
Ginseng
Red dates
Goji berries
Mushrooms
Whole chicken
Salt & Sugar (to taste)

Directions
1. Stuff the Ginseng & Red dates into the chicken
2. Place the chicken into the pressure cooker
3. Add in mushrooms, goji berries & water into the cooker.
4. Add salt & sugar (amount personal preference)
5. Turn the settings to slow cook mode

And Voila! It is that simple! Last and easiest step is to enjoy your meal!
