Easy To- Go Salads

Having to lead an urban lifestyle especially in a country with tons of delicious food like Malaysia makes eating healthy on budget and dieting a Herculean’s task . This is because urbaners seldom have the time to prepare their own meals and tend to opt for restaurants or cafes which provides food containing MSG.

It is undeniably true that those food tastes good , but in a long run, those food can cause health issues . A common solution for this problem is to dine in organic restaurants , but sadly meals being labelled organic are mostly costly . Therefore , the most practical and wallet friendly revenue is to prepare your own meal.

Salads is one of the best that you can think of considering the fact that you get to decide the budget of your salad and have the absolute freedom to choose which type salad that you are going to make based on your own liking. Here are a few types of salads : tossed salads ( Caesar salad and green salad), composed salad (cobb salad), bound salad ( chicken salad, tuna salad) and farinaceous salad ( potato salad, pasta salad).

Well. To be honest , all those fancy and bombastic names of salads has never truly mattered , because the most important thing is to create with a palatable salad that suits your taste. Therefore, here are some easy to go salad recipes that I have compiled from various websites for you to come up with your own salad recipe , WHO KNOWS MAYBE YOU’LL END UP BEING THE NEXT MASTERCHEF!!!! ………… of salads so it’s TIME TO STEP UP YOUR SALAD GAME ! HERE WE GO !



1.Almond Crunchy Salad
What you need :

-1/2 cup of sliced almonds
-3 tbsp of sugar
-6 cups of torn romaine (you-mak)
- 11 ounces of drained mandarin oranges
-1 cup of sliced celery
- 3 sliced green onions

Dressing:
-1/2 cup of vegetable oil
-1/4 cup of vinegar
-3 tbsp of sugar
-1/2 tsp of salt
-1/2 tsp of ground mustard
-1/4 tsp of garlic powder

What to do:
Fill a small saucepan with the almonds and cook over medium heat. Next, add in the sugar and continue to cook until almonds are coated and lightly browned, roughly around 4 minutes will do. Remember to keep stirring to prevent the sugar from being burnt.

Spread the almonds on a aluminium foil and let it cool.

In a large bowl, mix in the romaine , mandarin oranges ,celery and onions. Then, top it with the almonds .

To prepare the dressing, pour in all the ingredients needed into a tightly- fitting jar and shake well. Lastly, drizzle the dressing over the salad and toss gently .




2. Avo- Berry Salad
What you need:

-2 tbsp of sugar
- 2 tbsp of olive oil
-4 tsp of honey
- 1 tbsp of cider vinegar
-1 tsp of lemon juice
-1/4 tsp of salt
-1/4 tsp of crushed celery seed
-2 cups of mixed vegetables

Dressing :
-1/4 tsp grounded mustard
-1/4 tsp of Paprika
-1/8 tsp of onion powder

Toppings:
-1 medium ripe avocado
- 16 sliced strawberries

What to do:
Mix all the ingredients into a bowl.Top the salad with avacados and strawberries . Drizzle with the dressing.




3. Grilled Salmon Salad with Pineapple Salsa
Preparation time: 10 mins
cooking time: 20 minutes
Total time: 30 mins
What you need:

Salmon:
-1 lbs of salmon with skin removed
-1 tsp of Garlic powder
- 1/2 tsp of sea salt
-1/2 tsp of smoked paprika
-1/4 tsp of chipotle chilli powder
-1/4 tsp of ground cumin
-1/4 tsp of ground cinnamon

Pineapple salsa:
-1 1/2 cup of diced pineapple
- 1/3 cup of diced red pepper
- 1/4 cup of diced red onion
-1/4 cup of fresh cilantro
- lime juice
-a pinch of salt

Dressing:
- 1/4 cup of lime juice
- 1/4cup of fresh cilantro
- 3 tbsp of canola oil
- 1 tbsp of apple cider vinegar
- 1 tsp of raw honey
- 1 lettuce
- 1 red pepper
- 1 yellow pepper
- 2 corns
- 1/2 cup black beans
- 1 sliced avocado

What to do:
1. Preheat a skillet to medium high heat
2. Add the garlic powder, Sea salt, smoked paprika , chipotle , Chili powder , ground powder cumin , and ground cinnamon in to a small bowl . Mix well.
3. Rub to dry the salmon with a kitchen towel . Then , rub the spice onto the salmon and set aside.
4. Add pineapple , red onion, fresh cilantro, lime juice, and a pinch of salt into a medium bowl .Combine and set aside.
5.Add lime juice, fresh cilantro, canola oil, apple cider vinegar, raw honey and salt into a food processor . Next, blend until smooth.
6.Grill the peppers and corn for 3-4 minutes until slightly charred. Grill the salmon for 5-8 minutes per side .
7. Slice the salmon into pieces of 3-4 oz , peppers into thin slices and remove the corn from the cob.
8. In a large bowl , add lettuce, peppers, corn, black beans, avocado, pineapple salsa, and top with dressing.




4. Grilled Chicken Caesar Salad
What you need:
-2 boneless chicken breast
- a pinch of salt & pepper
-1 head of lettuce, cut in half
-1 1/2 cups of cherry tomatoes
-2 hardboiled eggs, cut into quarters

What to do:
1. Preheat a skillet to medium high heat.

2.Sprinkle and rub both sides of the chicken breast with salt and pepper.

3. Grill chicken on each side for 5-6 minutes, or until there is no more pink.

4.Next, make the Homemade Caesar Dressing in a food processor.

5.Place the cherry tomatoes to a grill basket, and grill for 4-5 minutes or until tomatoes start to burst. Remove and set aside.

6.Place the lettuce on the grill, and grill for 2-3 minutes until slightly charred.

7.Roughly chop the lettuce, place in a large bowl with sliced grilled chicken, hard boiled eggs, and cherry tomatoes. Drizzle with Homemade Caesar Dressing and it is ready to be served .
