Recipe: Pumpkin Soup

Simple breakfast or appetiser for your meal.

INGREDIENTS:
- 6 cups broth of your choice
- 4 cups pumpkin
- 1 teaspoon fresh parsley, chopped
- 1 cup onion, chopped
- 1 clove garlic, minced
- 1/2 cup milk
- pepper, to taste
- salt, to taste

INSTRUCTIONS:
1. Heat garlic and onion until it is fragrant. Add in pumpkin and stock. Bring to a boil and simmer for 30 minutes.
2. Puree the soup in small batches with a blender.
3. Return to pan and bring to a boil again. Reduce heat to low and simmer for another 30 minutes. Stir in milk and fresh parsley.
